Rick comes home from Dallas today so I thought I'd bake these brownies to celebrate. I love that the ingredients are so simple and maybe even a little bit healthy. :)
Ingredients

1/2 cup unsalted butter (one stick) plus additional for brushing pan
2 ounces finely chopped bittersweet chocolate
2 ounces finely chopped unsweetened chocolate
3/4 cup sucanat
1 teaspoon vanilla extract
2 large cage-free organic eggs, lightly beaten
6 tablespoons unbleached all-purpose flour
1/2 cup dessicated coconut
1/2 cup toasted pecan halves
1/4 teaspoon salt
Directions
Preheat oven to 350°F and lightly grease an 8-inch square baking pan.
Melt butter with chocolates in a heavy medium saucepan over moderately low heat, stirring, just until chocolate is melted, about 3 minutes. Remove from the heat and whisk in sucanat and vanilla extract. Add eggs one at a time until each is combined well. Stir in flour, coconut, pecans and salt until combined well. Spoon into prepared baking dish, smoothing top.
Bake in middle of oven until brownies are set (top will look slightly wet but will absorb as it cools) and a toothpick inserted in center is clean, about 18 minutes. Let cool for 10 minutes in pan and cut into squares.
